A Sushi Master's Story

Charlie Lam is not just a chef and restaurateur, he is a sushi master who has been in pursuit of perfecting his craft for his entire life. He opened his first restaurant in 1996, Kaiko Sushi Bar & Japanese Restaurant, where he delighted the Tampa Bay area with his authentic and delicious Japanese cuisine for over 20 years. After retiring in 2014, he soon realized that he missed his craft and his customers.

In 2017, he came back with a bang, launching Charlie’s Sushi and Japanese Restaurant, an homage to the nickname of "Charlie's Sushi" commonly referred to by his regulars over the years. He continues to serve his signature sushi and Japanese cuisine with dedication to the Tampa Bay community.

The Legacy of Charlie's Sushi

The restaurant is also a learning environment for many of the workers who have been part of the team over the years. Charlie's Sushi has a legacy of nurturing talent and fostering entrepreneurship; some of whom have gone on to open or manage their own restaurants.

The success of Charlie’s Sushi is attributed to the loyal customer base that it has built over the years. Many of the patrons who frequent the restaurant are regulars who have followed Charlie from his previous ventures and have become friends with him and his family. With delicious sushi and a warm and friendly atmosphere, Charlie and the team make sure that every guest feels welcome.
